As I’m sure many of you, like myself, have pinned countless inspirations onto Pinterest boards and then promptly forgotten about them. My food and recipe board has by far the most pins, so I decided it was time to actually make one of these recipes.
As not to over when myself with all the amazing looking choices, I decided to go with something a little more on the simple side (but surely not simple tasting, as I would discover) and made Jessica’s Roasted Grapes, Goat Cheese, + Honey Stuffed Sweet Potatoes. If you having been reading for a while, you know about my obsession with love of sweet potatoes, so this was a perfect pick for me.
I made a single serving rather than 4, and used coconut oil as my cooking oil. As much as I adore goat cheese, I was feeling something a little sweeter, so I decided to use almond butter in place of the goat cheese.
Seriously, this was so good. I never though to top my sweet potatoes with sweet roasted fruit before (although dark chocolate chips are a common occurrence) and the flavor combinations was unbelievable. Now I just need to make mine look as good as Jessica’s…
I had this for dinner, and to complete my meal I had the giant container of roasted vegetables I picked up at Whole Foods yesterday.
So did end up having quite a relaxing and laid back day, and it couldn’t have ended in a more delicious manner.
