Hey there lovely readers, I hope your day is going well. I loved reading all your responses on yesterday’s fruit post, it seems many of us have similar views on the matter! Now on to today…it’s Wednesday so by now you likely know what that means…
I was especially excited to participate in Jenn’s little WIAW party this week because something amazing happened: I got my butt back in the kitchen and ate a few meals sans tupperware. Crazy stuff, I know. Now that my summer classes are over and I am not hopping from coffee shop to the library and back to a coffee shop quite so often, I have had a chance to enjoy more meals at home. Since it’s summer and I don’t necessarily want to turn on my oven for extended periods of time, my meals have been more of the non-cooking variety, but it’s the same idea I suppose. Don’t forget to head over to Peas and Crayons and spread some love.
Oats with strawberries, plain Siggi’s yogurt, and honey. Lately oats have been the last thing on my mind for breakfast (unless they are cold in overnight oats form, that is), but on Monday morning I just had to have a nice warm bowl of oatmeal.
Chia pudding. I have been loving on chia puddings lately. This one was a simple mix of chia seeds, almond milks, water, cinnamon, vanilla, and blueberries.
Strawberry protein smoothie. I kept it simple and refrained form adding 1000000 superfood powder and other add ins and stuck to the basics with this one: strawberries, banana, almond milk, protein powder, vanilla, and ice. And while I have plenty of nice serving mediums, I opted drink this straight from the blender.
Veggie spring rolls. These pretty much exemplify the “no-cook” concept, but they were so perfectly refreshing as a light dinner a day of heavy chocolate kitchen experimenting/consuming. I used the entire pack of rice paper sheets so I must have eaten about 12 of these babies with an amazing dipping sauce I made form sunflower seed butter, peanut flour, Bragg’s aminos, ginger juice, coconut sugar, and almond milk.
Salad and Japanese sweet potato. The huge salad/sweet potato combo will never ever get old.
That’s all I’ve got for now, but hopefully there will be more delicious meals coming out of my kitchen in the days to come.
